This is a quick and easy cookie recipe using store cupboard ingredients and our legendary Original Sunhini. It's crunchy, crumbly, soft and chewy; everything that you look for in a classic cookie.
Sunhini Oat Cookie

5g bicarbonate of soda
200g Original Sunhini
110g sugar of choice
Preheat the oven 180°C.
Start by blending the oats into a fine flour in a high speed blender. In a large mixing bowl, combine the oat flour, sugar, bicarbonate of soda, and salt. Add the Sunhini and water and mix well until a cookie dough is formed.
Roll 40g balls of the dough, and place onto a baking tray lined with baking paper. Flatten the balls using the palm of your hand into flat discs. Sprinkle some jumbo oat flakes on top of each cookie for decoration. Ensure enough space in between the cookies as they will spread out.
Bake for 8-10 mins. Allow to fully cool on the baking try before transporting them to an air tight container, where they will keep for 2-3 weeks.
