It's almost Pancake Day! You know what that means - pancakes all day long. Here is a quick and simple fluffy buckwheat pancake recipe, with Coconut Sunhini in the mix for added creaminess and substance. And to top it off? More liquid sunshine (aka Sunhini), of course. Happy Pancake Day!

Sunhini™ Pancakes

Ingredients
150g buckwheat flour
1/2 tsp bicarbonate of soda
2 tbsp Coconut Sunhini™
250ml milk/water
1 tsp sweetener of choice
pinch of salt
dash of apple cider vinegar
1/2 tbsp maca (optional)
2 tbsp oil, for cooking
Toppings (eg, banana, jam, hemp seeds, coconut flakes, Sunhini, maple syrup)
Method
In a bowl, mix the buckwheat flour, salt and baking soda.
Whisk in the milk or water, sweetener of choice and vinegar until smooth. Add the Coconut Sunhini until fully incorporated. The mixture should be thick.
Heat the oil in a large frying pan, and dollop 2 heaped tablespoons of the pancake mixture into the pan. Allow to cook on a low-medium heat for 1-2 minuets on each side until golden brown.
Serve with a luxurious drizzle of your favourite Sunhini, and whatever other toppings you like!
